Stuffed capsicum believe it be a complicated recipe but in reality it is pretty simple to make.It is just that you should know the simple tricks described in my recipe.
5 capsicum(shimla mirch) 1 finely chopped onion 3 medium size boiled potatoes 1/4tso dry mango powder(Aamchoor) 1/4tsp turmeric powder 1/2tsp red chilli powder 1 finely chopped green chillies 1tsp coriander powder Olive oil for frying Salt to taste
1-Heat 2tbsp of Olive oil in a pan and add cumin seeds when hot.Wait till cumin seeds starts spluttering. 2-Add chopped onion and green chillies an saute them until brown. 3-Mashed the boiled potatoes and add them in the onion. 4:Add all the powdered spices and mix them well.Cook for 5-8 minutes till potatoes absorb all the masala.
For bharwa shimla mirch/Capsicum 1-Wash the green peppers well and pat dry them with a towel.You can slit the capsisum or can cut the top off about 1″ from where the stem is attached. Remove all the seeds and pith and discard. Trim bottoms very slightly. 2-Fill each green pepper to the top with the mashed potato mix. Press down and top up to ensure they are well filled. 3:Heat Olive oil in a pan again .When hot add the peppers (standing up) and fry till soft. 4:Now take oil/ghee in a kadhai and fry the stuffed capsicums on all sides. 5:Garnish the bharawan capsicum with grated paneer, chopped coriander leaves and thinly sliced rings of tomato. Serve hot.
For those who are interested in baking capsisum
Preheat the oven to 350F .keep the stuffed capsicum/Shimla mirch in a baking non stick pan and keep in the oven for half and hour.
